Ingredients for Malva Pudding :

For the pudding:
1 cup all-purpose flour
1 cup granulated sugar
1 teaspoon baking soda
1 pinch of salt
1 tablespoon melted butter
1 large egg
1 tablespoon smooth apricot jam
1 tablespoon vinegar
1 cup milk

For the sauce:
1 cup heavy cream
1/2 cup butter
1/2 cup granulated sugar
1/2 cup boiling water

Instructions:

Preheat your oven to 350°F (180°C) and grease a deep baking dish.
In a large mixing bowl, sift together the flour, sugar, baking soda, and salt.
In a separate bowl, whisk together the melted butter, egg, apricot jam, vinegar, and milk until well combined.
Gradually add the wet ingredients to the dry ingredients, mixing well after each addition, until you have a smooth batter.
Pour the batter into the greased baking dish, spreading it out evenly.
Place the dish in the preheated oven and bake for about 40-45 minutes or until the pudding is golden brown and a skewer inserted into the center comes out clean.
While the pudding is baking, prepare the sauce. In a saucepan, combine the heavy cream, butter, sugar, and boiling water. Cook over medium heat, stirring constantly, until the sugar has dissolved and the sauce has thickened slightly.
Once the pudding is done, remove it from the oven and immediately pour the hot sauce over the hot pudding, allowing it to soak in.

Let the pudding stand for a few minutes to absorb the sauce before serving.


Serve the Malva Pudding warm, either on its own or with a dollop of whipped cream or custard.
